Roasted garlic butter is really easy. You cut off the top 1/2 inch of a couple of heads of garlic, drizzle each with about a TB olive oil, and roast, uncovered, at 275 degrees for 1 1/2 hours. You let them cool, squeeze out the soft cloves into a food processor bowl, pour in about 1/4 to 1/2 c melted butter (about and equal amount to the garlic) and puree until smooth. If you refrigerate it overnight, the flavor intensifies. (WOW!) You can spread it plain on bread, spread it with cream cheese, or spread it on the bread slices, top with a sliver of brie, and place under the broiler just long enough to melt the cheese. Warning: this may be an aquired taste
